New Status or Flag to track and visualize actions that have been taken on existing quotes

Currently team members need to open each quote and look through the notes to see what actions might have been taken. This is time consuming and cannot be filtered/reported on.

Would like to have a way to track the follow up activities, who they were done by, when they were done and have an easy way to visualize the follow up status from the main open quotes list with all quotes collapsed. (activity, who completed and when completed does not need to be visualized on the collapsed quote, just the status).
